Strawberry Coconut Cake!

So after going through my new basket full of goodies I found this coconut and decided to make a dessert with it. I googled Coconut recipes and I found this.

Ingredients:
1 Box white cake mix
1 cup veg. oil
4 large eggs
1 cup flaked coconut
1 pk. (3oz) strawberry flavored gelatin
1/2 cup milk
1 cup chopped pecans

Strawberry Cream Cheese Icing:
1 pk. (8oz) cream cheese, room temp
1/2 stick margarine, room temp
1 teaspoon vanilla
1lbs bag of powdered sugar

Mix cake mix with gelatin, Add oil, egg, coconut and milk; and beat until well blended. Stir in 1 cup pecans. Bake in 2 greased and floured round cake pans (if you put wax paper in the bottom of the pan they will flip out very easy) at 350* for around 30-35 mins.
I topped my cake with a few pecans to make it pretty.

(optional- the recipe called for fresh strawberries mixed into the cake.. but being allergic I left them out. My family cut them up and topped them on the cake when they ate it with vanilla ice cream and loved it!)

Now tonight for dinner I am making Chicken grape salad on fresh baked rolls! Whoo hoo for being home during the day and for bountiful baskets :)

That sounds yummy:) We should get together soon. I think we need to double date... let me know what you think:) And I'm always home taking care of boys so it would be fun to go to lunch sometime.
